Feel the inspiration at the “Food4Thought” event – with practical ideas and tangible products – to nourish yourself in an even more climate-friendly and environmentally friendly way. Numerous innovative exhibitors will show you in our marketplace how diverse and delicious sustainable nutrition can be. There are tastings that will let you discover new foods, and short workshops where you will create your own products. Researchers will provide insights into current projects related to climate-friendly nutrition at the "Meet the Scientist" over lunch. You will also learn more about student projects and about sustainable food initiatives that are already being implemented on the ETH campus.

The public event will take place on Sunday, 3 April, as part of Treffpunkt Science City and will continue on 4 and 5 April. On these two days, you will also gain insights into selected ETH research projects.

On all three days, we warmly welcome the visitors of Treffpunkt Science City, ETH staff and students, as well as the interested public.

ACKR (Sun 3 April – Tue 5 April)

ACKR rescues Swiss vegetables rejected by food stores due to aesthetic standards from the rubbish bin. They are used to produce delicacies with a long shelf life, such as pickles and crisps. Preventing food waste is ACKR’s daily bread.

At the external page Mok? market stall you will find different falafel mixes made from Swiss organic lentils and chickpeas. You can test the different flavours right on the spot and are provided with cool recipe ideas.

Greenioty (Sun 3 April – Tue 5 April)

external page Greenioty is an open-source vertical herb farm project that aims to promote the production of healthy and tasty food directly at the point of consumption. Information about the project is available at the stand of the ETH Student Project House. In addition, you can build your own Micro-Green growing unit in a workshop.

ETH Student Sustainability Commission (SSC) (Sun 3 April – Tue 5 April)

At the stand of the Student Sustainability Commission, you can make your own beeswax cloths, among other things. You can also learn more about the students’ activities and goals.

ETHSustainable Gastronomy Project(Sun 3 April – Tue 5 April)

The Sustainable Gastronomy Project aims to support the long-term development towards sustainable catering at ETH Zurich. Find out more about the project and the goals set by SV Group and Compass Group restaurants on campus.

ETH Store (Sun 3 April – Tue 5 April)

The external page ETH Stores stand focuses on packaging. Here, you can stock up on products from ETH spin-offs, such as “DrinkPure” water filters or reusable bottles.

SV Group (Sun 3 April – Tue 5 April)

external page SV Group operates 17 restaurants at ETH, both at the H?nggerberg campus and at the Zentrum campus. The company takes part in the Sustainable Gastronomy Project at ETH.
Visit their stand and make your own vegetable salt from the peelings and waste of various ingredients such as carrots, leeks or celery. You can take your salt home in a test tube. You can also find out about the sustainability goals that SV Group has set itself at ETH.

Compass Group Schweiz (Sun 3 April – Tue 5 April)

Microgreens von Greenioty

Vegetables should be fresh, but we don't always manage to use up everything in the household. In the ACKR workshop you will learn what is possible with canning and fermenting. ACKR will show you how to make a delicious spice brew, what to look for in processing, and what the difference is between canning and fermenting. At the end of the workshop, everyone goes home with homemade pickles and sauerkraut. On top of that, there will be tips on how to avoid food waste and how to grow vegetables.

ETH research on climate-friendly nutrition

ETH's World Food System Center works towards the vision of a healthy world through sustainable food systems. They work across disciplines and in partnerships with key stakeholders to create new knowledge and ensure it is put into practice.
At the World Food System Center exhibition, you can see films on current research projects via QR codes.
 

Many scientists at ETH Zurich conduct research on sustainable nutrition and sustainable food systems. Be it in the field of plant and animal breeding, sustainable food processing, human nutrition, but also agricultural economics and environmental policy. At the Meet the Scientist event, you will have the opportunity to learn about specific research projects at ETH and to exchange ideas directly with various scientists*.

Agriculture is a major contributor to CO2 emissions. In addition, intensive agriculture pollutes the soil and is partly responsible for the extinction of species. At the same time, food security must be guaranteed. Join researchers to discuss questions such as “What are the challenges and barriers to climate-friendly solutions in agriculture?” “Where are the opportunities for transforming the agricultural sector?”

How can we feed the world in 2050? In 2050, 9.1 billion people will live on Earth, 34 percent more than today. To feed this growing population, food production will need to increase by 70%. But how can this be done in a sustainable way? Algae and insects can be an answer. Scientists at ETH Zurich are developing innovative solutions to tap new sources of sustainable and nutritious proteins for human and animal nutrition.
